The contents of this publication represent an immense amount of thoughtful and valuable work. It is indeed encouraging to observe how much attention and investment is being devoted to increasing the yield potential of the rice plant and to the development and demonstration of improved systems of rice production in South and Southeast Asia. On the other hand much less effort has been devoted to the postharvest rice system: the continuum of activities that begins with the harvest and ends when the rice grain is eaten and its by-products are efficiently used.

This training manual, which is the outcome of a regional training course presented at the University of the Philippines at Los Banos, provides a wealth of useful information and advice to all who are directly concerned with rice production, protection, processing, marketing, distribution, and use. The contributors, together with all those who took part in organizing and presenting the course, and in the design, compilation, and editing of this publication are to be warmly congratulated upon the service they have rendered to international food and agricultural development.
